that sounds excellent I shall make that this weekend.. one of my
favorites is the following, that I adapted for use in large scale
catering
Mushrooms in a rich sauce
Boletos aliter:
Tirsos
eorum concisos in patellam novam perfundis, addito pipere,
ligustico, modico melle; liquamine temperabis; oleum modice. (Apicius
315)
#10 can
mushrooms sliced
Sauce:
measure Reserved mushroom liquid. start
with no more that I pint.
Add/cup
to taste pepper; fresh ground
1/2 tsp celery seed alternate with or use
Loveage; ground
1 Tsp Honey
1 Tsp Olive oil
1 Tsp Butter
Drain mushroom liquid and measure add
measured ingreadents, bring to
a boil, simmer and taste, alter ingreadients to taste, using
additional reserved mushroom liquid. Thicken if necessary with corn
starch slurry. Pan up mushrooms in pans and cover with sause, cover
and hold in hot oven or over sterno.
Except- I drain Shrooms lightly; use my leaf lovage; yes on Honey & O.o,
a good squert of Thi Fish sauce, no butter.
Mass quantities!
I had a tent set up outside the Coronation Hall,with 3 portable gas
stoves (and there was wind; it was April..) and 2 people opening &
draining the (4lb?) cans & chopping up an extra 10 lbs of shrooms,
'cause it tastes better; 3 people on the stoves with Large frypans&
wooden spoons, stirring, and I went to one after the other, first
the O.o, then the Shrooms, then honey,lovage, P., and T.F.S.
When done, into a nice, clean, warm cooler-6 batches each fryer.
That went on top of Polenta made of wheat, O.o, P., and Italian table
cheese.
There were 5 other dishes for my half of the feast (the other half was
Persian)
I'm very glad we made the Ostrich balls at home 2 weeks before..
